Coffee (Italian) “Pancakes”
Dark chocolate and espresso coffee. The right combination for a special pancake
MAKES 4 SERVINGS
2 cups flour
2 cups milk
1⁄4 cup butter
2 tbsp sugar
pinch of salt
● PREPARE THE PANCAKES
● Pour eggs (whole) into a bowl; crack them in a
separate dish first.
● Add the sugar and mix well. Add flour slowly and evenly, stirring constantly.
● Melt the butter and add to the batter, stirring continuously to avoid lumps, until the batter is smooth.
● Butter an 8” non-stick pan, and spoon in the bat- ter, spreading it out evenly with a wooden ladle.
● Cook the pancakes over medium heat until light- ly brown on each side. Remove and keep warm.
● INGREDIENTS FOR FILLING
1 1⁄4 cup dark chocolate
1 small can fresh cream
1 cup italian espresso coffee
● PREPARE THE FILLING:
● Whip the cream.
● Grate the chocolate into small flakes, and in a bowl blend it carefully with the whipped cream and coffee.
● Spoon the filling onto each pancake and fold over into quarters.
● Serve with extra whipped cream and garnish with coffee grounds, fresh berries.
